In my Equestria, Rainbow Dash would be my Celestia, and Vinyl Scratch my Luna.
Why..?
Rainbow Dash:
You can only see rainbows in the day time, because they consist of water and light, and Dash makes rainbows with her sonic rainboom. Plus her fur is the colour of the sky in the day time.
Vinyl Scratch:
Vinyl, or DJ-P0N3, is often asociated with raves and dubstep, because she's a DJ. Mostly the best raves are at night, and her coat is a pearly white colour, like the moon. Her sunglasses also suggest that she dislikes the sun in her eyes, another reason for her to be my version of Luna.
Plus both of the ponies are awesome anyways ^^
But if I had to limit to the mane 6, night would probably be Pinkie or maybe Twilight...

And I fully agree with you about Vinyl being a better princess of the night than Luna, but I am just thinking in the class of Sailor Moon and such.
